Also suitable for those looking to build their GCSE Food &amp; Nutrition practical skills to bring their theory to life! <\/p>\n\n\n\n<p>The Duke of Edinburgh&#8217;s Award AAP Team have confirmed that, although they aren&#8217;t currently taking on new cookery providers, I can offer the SKILLS SECTION as a smaller organisation. They have asked me to highlight that:<\/p>\n\n\n\n<p><em>This activity may count towards your Duke of Edinburgh&#8217;s Awards Skills section, but please check with your DoE Leader before booking<\/em>. <em>I\u2019m very happy to provide any information your Leader may need, and I will complete all required reporting as part of the programme.<\/em><\/p>\n\n\n\n<p><strong>BRONZE, SILVER &amp; GOLD COURSES<\/strong><\/p>\n\n\n\n<p><strong>Bronze &amp; Silver 3 Month\/12 Week Course<\/strong><\/p>\n\n\n\n<p>The 12 week course for both Bronze and Silver (subject to having completed the Bronze Award and opting for the 3 months Skills section) will consist of 5\u00a0practical sessions at Little Wren Cooking, with weekly home-based tasks of around 1 hour in duration being set to ensure the teens complete the necessary:<\/p>\n\n\n\n<ul>\n<li>3 month timeframe for the Bronze Award (Skills); and\u00a0<\/li>\n\n\n\n<li>3 or 6 months for the Silver Award, depending on whether they complete the 3 or 6 months for the Skills or Physical and whether they have completed the Bronze Award (please see below re condensing class dates for 6 month courses).<\/li>\n<\/ul>\n\n\n\n<p><strong>Silver 6 month and Gold Courses: <\/strong>Please see below for more information. <\/p>\n\n\n\n<p><strong>HANDS ON CLASS DATES<\/strong><\/p>\n\n\n\n<p>Practical Classes at Little Wren Cooking can take place on any of the following dates, subject to at least 3 places being booked:&nbsp;<\/p>\n\n\n\n<ul>\n<li>Sunday 7<sup>th<\/sup>\u00a0June (depending on people&#8217;s exam timetables!)<\/li>\n\n\n\n<li>Saturday 27<sup>th<\/sup>\u00a0June \u00a0<\/li>\n\n\n\n<li>Saturday 11<sup>th<\/sup>\u00a0July\u00a0<\/li>\n\n\n\n<li>Sunday 19<sup>th<\/sup>\u00a0July\u00a0<\/li>\n\n\n\n<li>Thursday 13<sup>th<\/sup>\u00a0August<\/li>\n\n\n\n<li>Saturday 22<sup>nd<\/sup>\u00a0August\u00a0\u00a0<\/li>\n<\/ul>\n\n\n\n<p>All classes will be held between 10am-1:30pm, allowing time for some more challenging tasks.\u00a0\u00a0 Class finishing time will be extended to 2pm for anyone completing their Gold Award for &#8216;condensing&#8217; purposes. <\/p>\n\n\n\n<p><strong>What We Will Make<\/strong><\/p>\n\n\n\n<p>Whilst the specifics are subject to the availability of all the fresh ingredients, here is the proposed outline of the menus\/activities for the Hands-On classes:<\/p>\n\n\n\n<ol start=\"1\">\n<li>The first session will focus on developing safe and effective knife skills and learning to build the best base flavours for a wealth of savoury dishes. Beginning with  creating the soffritto , we will use this for a hearty Vegetable and Pearl Barley Soup (almost a meal in itself!) and a rich Bolognaise. After making fresh pasta from scratch and a smooth Bechamel sauce, we will combine them for a gorgeous Lasagne to either eat in class or take home. To balance out the savoury, we will then turn our hands to making a Tarte Tatin;<\/li>\n\n\n\n<li>The second session will focus on pastry making, with a shortcrust pastry to make their own quiche, to be served with a salad and their own bespoke dressing. The second pastry will be a rough puff for strawberry and Chantilly cream puffs;<\/li>\n\n\n\n<li>The next session will look at raising agents, with a yeasted bread mix that we will use for fresh bread and pizza bases (that they will use for their lunch) and a seeded soda bread for comparison. We will also make some sponge cakes that we will do some buttercream piping work on;<\/li>\n\n\n\n<li>Session 4 will be focussing on Eggs and Rice, making fresh omelettes for our lunch, together with a choice of risotto, fried rice or sushi (or perhaps more than one!), with meringues with lemon curd and fresh fruit for dessert;\u00a0<\/li>\n\n\n\n<li>Working with a more international menu, we will make simple Ramen bowls with soft boiled eggs for lunch, followed by Katsu curry to take home, alongside Falafels with flat breads and yoghurt dressing; and\u00a0<\/li>\n\n\n\n<li>Depending on the weather not being too hot, we will create a roast from scratch to work on time and heat management, and make Eclairs using choux pastry for dessert.\u00a0<\/li>\n<\/ol>\n\n\n\n<p>Each of the sessions can be adapted to cater for vegetarian diets.&nbsp;<\/p>\n\n\n\n<p><strong>Cost<\/strong><\/p>\n\n\n\n<p>The total cost for the Bronze Award (and Silver Award where the Bronze has been completed, the 3 month Skills route is selected and condensed learning is acceptable by DoE Leader) is \u00a3267.50 per person. This will include:<\/p>\n\n\n\n<ul>\n<li>5 \u00a0hands on 3.5 hour lessons which include all ingredients used (but please bring containers as we will make the usually large amount of food, and a clean apron);\u00a0<\/li>\n\n\n\n<li>Recipe Sheets for everything made;<\/li>\n\n\n\n<li>7 Home Based Activities (sent ready for printing or completing online*);\u00a0<\/li>\n\n\n\n<li>Individual Report writing; and\u00a0<\/li>\n\n\n\n<li>Any other necessary compliance related tasks.<\/li>\n<\/ul>\n\n\n\n<p>* This may include the Food Standards Agency Food Allergy &amp; Intolerance Training online course, which gives them an extra component to add to their CV (perfect if they are looking for a job in hospitality!).\u00a0<\/p>\n\n\n\n<p><strong>Invitation to Attend One-Off Sessions<\/strong><\/p>\n\n\n\n<p>I am also opening up bookings for teens to attend any of these dates as one-off classes-\u00a0 perfect if your teen wants to bring along a friend who isn&#8217;t signing up for the full DoE course.
